Organic Grains with Coco Curry & Peanut Butter Sauce

Ingredients

  • 1 pouch of French Harvest Grains Turmeric & Provence Herbs
  • 1 block of smoked tofu (12.3oz)
  • 1 ½ cups of chopped broccoli
  • ½ chopped onion
  • 1 garlic clove, crushed
  • 3 tbsp of curry paste (green or red)
  • 1 can of coconut milk
  • 1 tbsp of peanut butter
  • 2 tbsp of olive oil
  • 2 tbsp of crushed peanuts for topping

Preparation

  1. In a frying pan, brown the chopped onion in a tbsp olive oil. Add the curry paste and stir over low heat for roughly 2 minutes. Add the diced tofu, and wait until it is browned (about 2 minutes).
  2. In the meantime, prepare French Harvest Organic Grains Turmeric & Provence Herbs as per package instructions.
  3. In a frying pan, cook the broccoli heads with the garlic and a tbps olive oil for 4/5 min.
  4. Add the coconut milk and the peanut butter to the tofu and stir until the sauce thickens slightly.
  5. Serve the grains with the curry and tofu sauce, and the broccolis. Sprinkle with crushed peanuts.
Tips
Tips : Replace the tofu by 2 diced chicken breasts
