Organic Grains with Coco Curry & Peanut Butter Sauce
Ingredients
- 1 pouch of French Harvest Grains Turmeric & Provence Herbs
- 1 block of smoked tofu (12.3oz)
- 1 ½ cups of chopped broccoli
- ½ chopped onion
- 1 garlic clove, crushed
- 3 tbsp of curry paste (green or red)
- 1 can of coconut milk
- 1 tbsp of peanut butter
- 2 tbsp of olive oil
- 2 tbsp of crushed peanuts for topping
Preparation
- In a frying pan, brown the chopped onion in a tbsp olive oil. Add the curry paste and stir over low heat for roughly 2 minutes. Add the diced tofu, and wait until it is browned (about 2 minutes).
- In the meantime, prepare French Harvest Organic Grains Turmeric & Provence Herbs as per package instructions.
- In a frying pan, cook the broccoli heads with the garlic and a tbps olive oil for 4/5 min.
- Add the coconut milk and the peanut butter to the tofu and stir until the sauce thickens slightly.
- Serve the grains with the curry and tofu sauce, and the broccolis. Sprinkle with crushed peanuts.
