Ingredients

  • 1 pouch of Roasted Garlic Grains Blend
  • ­½ green or red pepper (½ cup), chopped
  • ­1 block (7oz) of Feta cheese
  • ­1 ½ cup (4.7oz) shredded carrots or 2 medium-sized carrots
  • ­¼ cup of sliced sun-dried tomatoes
  • ­½ cup of yogourt (3.5oz)
  • ­1 tsp fresh chives, minced
  • ­­1tsp fresh parsley, minced
  • ­­1 tbsp olive oil
  • ­3 tbsp of fried onions
  • ­­1 tbsp pine nuts for topping

Preparation

  1. Prepare the pouch of Roasted Garlic Grains Blend as per package instructionspackage instructions and place it in 3 bowls.
  2. Slice all the vegetables and place them in the bowls.
  3. Cut the Feta in cubes of roughly 1 cm of thickness and divide evenly into the 3 bowls. Add some sun-dried tomatoes
  4. For the dressing, mix the yogourt with the herbs and season to your liking. Pour it over the bowls and sprinkle with pine nuts and the fried onions.
Tips
Tips: If you prefer something a little cooler, reserve the bowls 30 minutes in the fridge before serving.
