Turmeric & Herbes de Provence Grains with Ratatouille
Ingredients
- 1 pouch of Turmeric & Provence Herbs Grains
- 1 can (8oz) of tomato purée
- ¼ eggplant
- ½ zucchini
- ½ yellow pepper
- ½ onion
- 1 minced garlic clove
- 4 tablespoons of olive oil
- salt & pepper
Preparation
- Finely mince the onion.
- Dice the yellow pepper, the zucchini and the eggplant.
- In a pan, brown the vegetables and the garlic on high heat in olive oil for 3 min.
- Add the tomato puree to the vegetables and mix. Season to your liking.
- Let cook for 5 min on medium heat.
- In the meantime, prepare a full box of Turmeric & Provence Herbs Grains as package instructions. Set aside.
- Serve Turmeric & Provence Herbs with the ratatouille.
